Ingredients

  • 1/4 cup unsalted butter, softened to room temperature
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup plus 2 tablespoons (85 grams) all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup semi-sweet or dark chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium mixing bowl, beat together the softened butter, brown sugar, and granulated sugar for 2 to 3 minutes until the mixture is light, fluffy, and pale.
  3. Add the egg yolk and vanilla extract to the creamed mixture and beat until smooth and glossy.
  4. Shift the wet ingredients to one side of the bowl and add the flour, baking soda, and salt to the empty space; stir the dry ingredients briefly before folding everything together.
  5. Fold in the chocolate chips with a spatula until just combined, being careful not to overmix.
  6. Use a large scoop to form 8 to 10 dough balls and place them on the prepared baking sheet with ample spacing.
  7. Bake for 9 to 11 minutes until the edges are golden brown but the centers remain soft to the touch.
  8. Allow the cookies to rest on the baking sheet for at least five minutes to firm up before moving them to a cooling rack.

Notes

For an extra level of flavor, consider using high-fat European-style butter to make the crumb even richer. To achieve perfectly round cookies, you can use a large circular glass or cookie cutter to gently ‘scoot’ the edges into a circle immediately after pulling the pan from the oven while the cookies are still soft.
